Chicken Pot Pie

This delicious Chicken Pot Pie recipe makes enough to feed the entire family plus guests. It’s delicious comfort food at its best and, what's more, it won’t break the budget!

INGREDIENTS

100ml oil
1 large onion diced
2 large carrots diced
1 kg chicken fillets diced
1 teaspoon ginger and garlic paste
1 teaspoon mixed herbs
1 teaspoon chicken spice
2 punnets button mushrooms sliced
1 packet white onion soup
200 ml water
250 ml cream
Salt and pepper to taste
2 rolls store bought puff pastry

METHOD

  1. Preheat your oven to 180°c.
  2. Add oil to a pot on high heat. Add in onions and carrots and let them soften.
  3. Add in the chicken and let it brown.
  4. Then add in the ginger and garlic paste, mixed herbs and chicken spice and mix together.
  5. Add in the mushrooms and mix. Let the mushrooms release their water and simmer.
  6. Dilute the white onion soup powder with 100 ml of water to make a thick paste and add to the pot and mix. Then follow up with the remaining 100 ml of water.
  7. Add in the cream and mix. Close the pot and let it simmer for 5 minutes on medium heat and then 5 minutes uncovered until the sauce has thickened.
  8. Taste and season with salt and pepper to your liking.
  9. Divide the mix in half. You can use this to make the second pot pie or freeze to use on another day for a delicious pasta sauce.
  10. Roll out the puff pastry as thin as possible on a floured surface and use the pot lid to cut a circle of pastry and place over the top of the chicken mix.
  11. Pierce the pastry with a knife for steam to evaporate and bake for 15 minutes or until the pastry is golden and cooked through.
  12. Cut into 6 triangles and serve with a side salad.
