Coconut milk hot chocolate
I wanted to cheer myself up with something warm, exotic and quick! Raiding the kitchen cupboards I found a can of coconut milk, cocoa and the last of my dark chocolate stash, and so this warming treat was created!
Coconut milk hot chocolate
Serves 4
1 tin (400 ml) coconut milk
600 ml milk
45 ml cocoa powder
80 g dark chocolate
15 ml vanilla essence or extract
sugar or honey to taste
Method
- Place milk, cocoa, chocolate and vanilla in an AMC 16 cm High. Heat over a medium temperature. Stir until chocolate has melted and leave to simmer on a low heat for a few minutes.
- Sweeten to taste with honey or sugar and pour into cups. Serve immediately.
Variations:
- Flavour hot chocolate with any of the following for an extra flavour kick: a cinnamon stick, cardomom pods, a dash of chilli powder, or a rind of orange.
- For a traditional hot chocolate replace coconut milk with normal milk.
- Add some instant coffee or an espresso to the hot chocolate for a caffeine kick.
